An easy & simple eggy breakfast.

One of the things that I was caught of guard with when I began to adult with my husband was getting used to fixing breakfast daily. I finally understood why so many people decide "they don't do breakfast." It requires getting up earlier and extra preparation, especially if you have to leave home before 7:30am, which we both do.

Breakfast is my favorite food ever, I love eggs, bacon, bagels cream cheese...etc. I am not one to be satisfied with a protein shake, or cereal. There have been plenty of days that I have had to do with just that, or even just a granola bar because I either ran out of groceries, or woke up late. I am still exploring for ways to have breakfast made somewhat ahead of time, so that I can enjoy my favorite meal. 

Today Drew & I made these awesome breakfast egg muffins. I actually got this idea from a dear friend from church and just now finally decided to try it. 

Super easy to make. Pick your vegetables & protein and sautee them for better flavor. Beat 1 dozen eggs add 1/2 cup of milk. Spray your muffin pans & distribute the egg mixture. Add your toppings, I used onions, sausage, peppers, mushrooms, spinach & cheese. Place in the oven for 15-18 min at 350 degrees. Que Delicioso!

These can be cooled, and then kept frozen. Enjoy them by just microwaving them for 1-2 minutes.
